"Energy saving and the limitation of heating costs are two very important factors to which the use of biomass burners (pellets) in professional bread ovens contributes, along with the protection of the environment, of course. The most widespread such option is the use of biomass-pellet burners. A renewable, economical and climate-friendly alternative to expensive oil and natural gas. Biomass pellets are a high-quality renewable solid biofuel, and in particular they are aggregates of woody biomass. Unlike conventional biomass fuels (wood logs, tree trimmings, etc.), pellets manage to combine some valuable characteristics: low moisture (8-10%), high energy content and uniformity in shape (cylindrical) and size (length 30 -40 millimeters and diameter 6-8 millimeters), a very important element for the transport and storage of fuel. No chemicals are used in their processing, only high pressure and steam. So they do not burden, but on the contrary they are friendly to the environment.

Pellet burners in bakery ovens, but also in driers, in dryers, in hotels and in many other professional uses ensure an economy that can reach the 70% in relation to oil.

18 years ago, due to the burdened atmospheric environment in Athens and Thessaloniki, the use of biomass in the central heating facilities of the two urban centers was prohibited. Thanks to the progress of pellet burning technologies, the Ministry of Environment recognized that it contributes to saving energy and limiting costs for heating compared to the use of conventional fuels. Thus, in order to harmonize with the corresponding European experience (para. 3 of par. 1 and 2 of Directive 2009/28/EC of the European Parliament and of the Council of April 23, 2009 regarding the promotion of the use of energy from Renewable Sources), revised the institutional framework by lifting the ban on the use of central biomass burners in Athens and Thessaloniki (Y.A. with no. IIK 189533/7.11.2011) on the topic "Regulation of issues related to the operation of fixed combustion stoves for heating buildings and water", which allows the use of solid biomass as fuel in facilities for central heating of buildings and production of domestic hot water and steam in the above prefectures". Placing the pellet burner in the oven of every bakery is the most reliable solution for achieving the minimization of baking costs, which is also the biggest expense for a bakery.
